Serves 12
1 1/2 lbs. Mild Italian Sausage
1 1/2 c. chopped onion
3 cloves minced garlic
10 c. beef broth
1 c. water
1 T. red wine vinegar
2 large cans diced tomatoes
1 1/2 c. thinly sliced carrots
2 t. dried basil
1 t. dried oregano
16 oz. tomato sauce
2 cans italian bean (look like flat green beans)
3/4 lb. tortelini pasta
1/4 c. chopped fresh parsley
Brown sausage. Add onion and garlic when almost cooked. Drain drippings. Add all but last 3 ingredients, cook 30 minutes. Skim any additional fat. Stir in beans and parsley & cook 30 minutes, add tortellini last 10 minutes. Serve w/ freshly grated parmesan cheese.
